Ingredients:

- 3 eggs
- 1 teaspoon of baking powder
- 1 teaspoon of cinnamon (optional)
- 1 teaspoon vanilla essence
- 150 g sugar
- 100 g butter
- a little condensed milk
- 150 g wheat flour
The first step of course is to buy the pumpkin, and although they are all pumpkins, I wanted to look for the most similar to the one sold in my country. I tell you that we got some very large and orange and other very round, but finally I decided on some that are brought from Spain and you see below, they are not so big so it was perfect and enough to prepare the cake.
Once we have the pumpkin, we get home to wash it, remove the seeds and cut it into pieces to cook it with water until it softens and we also prepare the other ingredients of the cake.
Once the pumpkin is soft, which we realized using a fork. We begin to beat the butter with the sugar in a bowl until we have a smooth mixture, then we add egg by egg.
Once all the eggs are integrated, we are going to add the condensed milk (I used 4 tablespoons, you can do it to taste, you can even add less sugar and use more condensed milk). Next, and optional, add a teaspoon of cinnamon (I recommend it because it gives a delicious touch to the cake but if you prefer not to use it, the cake is also delicious).
Now, we are going to add the vanilla essence and beat very well. In another cup we are going to put the flour with the baking powder and stir to proceed to sift this and add it to our previous liquid mixture, we beat very well until we have a homogeneous mixture.
It is time to add our pumpkin that we previously mashed with the help of a fork. We are going to add it to our mixture little by little, stirring with the help of a balloon whisk, I do not recommend you to continue with the mixer because you will make a mess (I say this from experience hahaha).
Once the cake mixture is ready, we are going to put it in a mold that we previously greased with butter and flour and also put baking paper in the bottom. Now, we take our mixture to the oven that was previously preheated at 180° for an hour and a half or until a knife comes out completely clean.
Saludos!
Let it cool completely and enjoy this delicious pumpkin cake, at home it is already finished, my husband loved it and he had never tried it before, so I recommend it. That's all for today, I hope you liked it, see you in a future post. Greetings!
