In probably every country there is a traditional fried rice or rice pilaf or rice dish. I know Thailand often has a fried rice with chicken or pork topped with egg and bean sprouts, and other countries have their traditional rice dishes with certain items and spices in them.
I am mostly familiar with the fried rice from Chinatown late night eateries and take out and my recent trip to Thailand where I was born.
I am vegan so I will not use animal products. This fried rice is kind of a general Asian inspired dish with the items found in my fridge. Since I received a wok from a friend I have discovered the ability to make food without using more than one pan.
I started with the basics of onion, garlic, chili, and ginger.
I chose tofu as my meat replacement.
Start with browning one onion, four cloves garlic, ginger and chilies.
Add tofu then vegetables. In my case I added a chopped green pepper, one chopped zucchini and two cups of shredded carrots.
I had some frozen vegetables that included peas and corn so I added them as well.
Before adding two cups of rice I mixed in 1/3 cup tamari or soy sauce, 2 tablespoons rice wine vinegar, 1 teaspoon cumin powder, 1 tablespoon agave nectar, juice of one lime, 1 tablespoon veggie soup broth powder and white pepper.
Of course it doesn't require hot chilies, but I am putting them in because we like it but also to celebrate having my own kitchen that I can cook spicy food in without offending anyone.
