It was supposed to have been curry. However, a combination of factors including that some of the ingredients had been used in other meals and a Mexican nudge from most recent post inspired a brinjal chilli. I served that with some roasted butternut and sweet potato on flatbreads.
I needed cheese, but without that and my market pal, Trish's amazing tzatziki, it would have been mostly plant-based.
A little blurry...
Why a quick trip? Well it was quick because is was mostly in my head and lasted between the office and the kitchen.
