It´s been a while since I posted here. As in my previous post, I have mentioned that we relocated. Now we are in another District and have settled in a flat. For health reasons, we had to move because the maintenance of our house and garden became so tedious for our "advanced age".LOL! From 4 bedrooms , we trimmed into 2. Now I have lesser cleaning and have more time for my hobbies. This is my post about the food I cooked last.
The Cravings....
Sometimes one simply can´t resist if a craving for something is so strong, you´ve got to have it! I once wanted to eat French fries and we didn´t have a reserve -pack in the freezer, so out I went to go to the next supermarket to get one .... and oh with mayonnaise and catsup of course! This time, it was an inevitable situation for me because I have to have something meatless and if my craving if fulfilled it will for sure give me satisfaction.
As I went to buy some vegetables and meat the other day, I thought of frying a pork chop to go with the vegetables, but the moment I arrived at home, I decided at going meatless and cooked for dinner the fresh veggies I got. The ones I bought came from different shops. The water spinach and the Tofu were found in the Asia Shop. The spinach was imported from Thailand and the Tofu was manufactured in the Netherlands. The bunch of water spinach was much different from the ones we have in the Philippines. In the fresh market in Manila, we always got the freshest rounder variety that tasted so delish. And of course, since the Thai version is imported it was expensive at 3.29 Euros for a 200 gram pack. I settled for it since they are not available in any other shop. The soya sprouts came from Spar Supermarket and the mushrooms came from the Turkish shop. All shops are located near each other.
Without any further ado, below are the ingredients and the procedures of how I did this.
Ingredients for 1 Serving
a bunch of water spinach
3 slices of Tofu
3 cloves garlic
1 onion
about 8 cherry tomatoes
1 cup soya sprouts, blanched
soy sauce
Teriyaki sauce
salt
black ground pepper
vegetable cooking oil
Procedures:
1... Gather the ingredients and cut what are necessary, these are the ingredients for the stir-fry water spinach. Crush the garlic and slice the onions.
2... The Tofu available was in block form, I simply cut 3 slices just for myself, diced them and marinated with 1/2 tablespoon soya sauce and set aside for later cooking.
3...Fry the crushed garlic and sliced onions , stir-fry until they get brown in color.
4... Add the cherry tomatoes in the pan and fry ´til plae in color. Wash the water spinach and cut its lower stem (discarding them) and then add these to the pan and stir-fry until they get limp. Add a bit of water just to make everything soft until the water evaporates. Sprinkle 1/2 soy sauce for the taste , add salt and pepper according to your taste preference. Set aside. Below is how it will look like when cooked.
The Mushrooms
5... Cut the mushrooms in bite size and marinate with 2 teaspoons Teriyaki Sauce, leave for a minute .
6... In a hot pan with 2 teaspoons cooking oil, sautée for about 4 minutes or until the pieces become soft and glassy in appearance. Sprinkle a bit of soy sauce to add a bit of color to the pieces. Set aside for later arrangement in the platter.
The Tofu
7... In a hot pan with more cooking oil, fry the Tofu until they get crispy.... you may deep fry the pieces but you can also sautée with less oil until all sides are properly cooked. Takes about 15 minutes. When done, set aside.
The Soya Sprouts
8... In a hot pan with 2 teaspoon cooking oil, fry the blanched soya sprouts for about a minute, sprinkle 2 teaspoons soy sauce, then add a dash of salt and pepper according to your taste preference.
Arrange in a platter and serve warm.
