Hi all friends, last week I buy bamboo shoots and pickle them. Now they are a little sour and I want to eat this pickled stir-fry. Itβs so easy to make and delicious with brown rice. Well, I didn't have brown rice so I eat it with bulgur today. In Cambodia we made pickled bamboo shoots for cooking and pickled bamboo shoots for eating fresh, they are both different.
If we pickle them for cooking, we just cut and soak them in saltwater, and after three days to a week or they become sour. After they are sour we can make stir-fry, soup and other things. We can also make bamboo shoots for eating fresh, but we use so many more ingredients. Pickled bamboo shoots are my favorite food.

Ingredients
- 2 cups pickled bamboo shoots
- 1/2 cup soy chunks
- 1/2 tsp tamarind pulp, or to taste
- 3 cloves garlic
- a little green onion
- 5 red chilies
- 1 tsp paprika
- 1/2 tsp white pepper
- 1 tsp salt or taste
- 2 tbsp brown sugar
- 2 tbsp soy sauce
- 1 tbsp nutritional yeast
- 1/2 cup water
Chop garlic and cut chilies and green onions. Soak soy chunks until soft and remove from the water. These bamboo shoots are a little sour, so I use tamarind for a good taste.

Step 2Then add soy chunks and stir-fry a little, then add salt, sugar, soy sauce, nutritional yeast, white pepper, paprika, and stir-fry well. | |
Step 3Then add bamboo shoots, stir-fry and add the water.Boil it a little, taste. and add green onions. Itβs ready. |
