I did not sell the flour, I used it. When you have four children at home, they go through a lot of bread. I would make 5-6 loaves at a time. Sometimes I'd make rolls or a special loaf (cinnamon or garlic) where I'd roll the ingredients inside of it (with lots of butter!).
Those loaves of bread never lasted long. At times I'd take some over to one of our neighbors.
When we were in our last house, there was a neighborhood potluck every month. They would always say to me, bring rolls! They knew I would make them fresh and they would come out of the oven right before I left the house.
The wheat I use is called Prairie Gold. Milling it made sure it was fresh. Whatever I milled that wasn't used was frozen for use in gravies or breading. If you don't freeze it, the oils will make it go rancid rather quickly. That's why whole flour from the store isn't as good (or nutritious), because they have to take the oils out. Milling it, with my electric mill, only took 10 minutes or less. The only issue was it was very LOUD.
