| Heat the cooking oil in a large skillet, add lemon juice to make the cake more crispy, drop the sweet potato and shrimp mixture by large spoonfuls into the skillet, flatten slightly and fry over medium heat until golden brown on both sides and cooked through for around 7-8 minutes. Repeat for the rest of batter then transfer the pancake to a plate with paper to drain the cooking oil.
