If you love poppy this is the right cake for you - lovely, tasty, and soft! Interestingly, it does not contain a speck of flour. I made it for Easter. By the way, for Easter, I like to have more cakes at the table, so these are mostly cakes that are easy and quick to make. One of them is this wonderful poppy seed cake. Like any mom, when it comes to sweets, I prepare exclusively what my children like, and this cake is one of their favorites.
Ingredients:
- 6 eggs
- 180 g of sugar
- 180 g of butter
- 280 g of ground poppy
- 1 tablespoon cocoa
- 1 tablespoon vanilla extract
For coating:
three tablespoons of apricot jam
Chocolate glaze: 200 grams of chocolate, a piece of butter, and a little milk.
Separate the egg yolks from the egg whites.
In a mixing bowl, whisk the egg yolks with the sugar first, until the mixture turns pale yellow.
Then add softened butter, a spoonful of cocoa, and vanilla extract and whisk it finely. After that, add the poppy seeds and combine everything nicely.
Whisk the egg whites separately, until soft peaks.
This time my son whipped the egg whites. I told him to whisk the egg whites long enough and to check. If he turns the bowl and the egg white mixture is still in the bowl, his task is done. He had to check :)
Add the egg white mixture to the poppy seed mixture, stirring lightly, until well combined.
The mixture is ready for baking. Use a smaller square baking dish (18x30cm) and baking paper.
Bake for about half an hour in a preheated oven at 200 degrees.
When it cools down a bit, coat it with apricot jam. I guess it can be any jam, I haven't tried it with another one, because apricot jam is a bit sour, so it's perfect for this cake.
Another coating over the apricot jam coating is chocolate glaze. I make it with 200 grams of chocolate, I arbitrarily put a cube of butter and a couple of spoons of lukewarm, melted, and nicely combined all the ingredients.
Wait for the cake to cool, then cut into rectangles.
And that is that. Quick and easy, and the result is fantastic. If you are a poppy lover, be sure to try this cake. The cake has a very striking taste which is of course dominated by poppy seeds.
