I love dessert. I love snacking. I love eating while I watch tv.
I have a problem.
But that is why I try not to have snacks in the house. In fact I tend to not even have the ingredients for making a treat or else I'd make cookies every day and eat every single one. It doesn't help that my husband doesn't have a sweet tooth at all and it falls on me to eat it all.
Burdens of life. Oh woe is me.
The point...yes, the point!
I had cream cheese in the house.
And I had a craving.
Cheesecake always satisfies.
BUT!
I am the absolute definition of lazy, especially when it comes to baking. I know it's a science. Yet I continue to think I am above it and can do what I like.
Sometimes it seems to work out, so I continue to believe in myself and the magic I possess!
So I took a half-ish package of cream cheese and softened it up and mixed in a little butter, a little sprinkle of sugar and an egg. Yes the whole egg...I'm sure many of you can already predict the outcome.
I love the crust part, but NEVER have graham crackers and also had NO cookies at all.
So I warmed up some almond meal and butter, pressed it into my little soup crock and threw it in the oven for like 5 minutes (this is when I ACTUALLY mixed all the filling stuff together).
Anyway, I poured the filling in, realized I had some chocolate chips, so threw a few in...baked that little baby for about 30 minutes at 400 degrees.
It was good...hit the spot...BUT, using the whole egg did give it a bit of a scrambled egg texture around the outside edge.
Lesson learned. When I went back a couple days later, to use up the rest of the cream cheese, I only used the yolk of the egg. Now THAT was a pretty good spur of the moment cheesecake!
