What do you usually cook with chicken? Will you stew it on the electric stove for hours or put it in the oven to bake and wait for the "ting ting"? That sounds pretty interesting, too. As for me, I choose a more special way to cook my chicken - it's "Bamboo Grilled Chicken". Believe me, after reading how I share how to make it below, you will definitely want to try this way right away. π
Prepare Ingredients
Of course, the first step to having a delicious dish is to prepare all the ingredients, right! My bamboo grilled chicken looks complicated but is actually very simple, the ingredients are also easy to find. I went to the market early to be able to choose for myself the freshest ingredients, and especially to choose the best chicken.
I went to one of the biggest and most famous traditional markets in Da Nang, which has everything you need for your party. I will introduce you to the traditional Vietnamese market in the next post, but now let's discover the ingredients to prepare for grilled chicken!
The ingredients for my "Bamboo Grilled Chicken" today include:
- Free-range chicken: 2
- Lemongrass: 500g
- Chili: 200g
- Spicy satay: 1 jar
- Sugar: 4 tablespoons
- Salt: 2 tablespoons
- Lemon: 1
- Cooking oil: 2 tablespoons
This is the portion I prepared for 6 people, you can increase or decrease the amount depending on your family's serving size.
Tips for choosing good chicken: A good chicken will have a compact, firm body, small breasts. Chicken skin is golden yellow, with dark yellow areas such as wings, breast, back, chicken skin is not bruised and has no black spots.
How to make "Bamboo Grilled Chicken" ππ
The ingredients are simple and easy to find, aren't they? Once you have the ingredients, let's get to work!
Step 1: Prepare ingredients
After buying chicken, you cut a line in the middle of the chicken belly for easy grilling. Then you rinse under strong water, add a little salt to rub around the chicken, doing so will help clean the chicken and remove all the smell of the chicken.
Chili and Lemongrass should be washed and chopped.
Step 2: Marinate Chicken
Mix lemongrass with chili until a homogeneous mixture. Then put a pan on the stove and add 2 tablespoons of cooking oil, wait for the oil to boil, then add the lemongrass and chili mixture and stir until it is fragrant. Then add the remaining ingredients, Sa Te, mix well, wait for it to boil, then turn off the heat.
After making the sauce, put the chicken in a pot or large food container and then add the sauce and mix well, massaging the chicken so that the seasoning penetrates the whole chicken. In order for the grilled chicken to be delicious, you should marinate the chicken for about 1 hour.
Step 3: Make the Dipping Sauce
While waiting for the chicken to marinate, let's make the sauce for dipping. This is a very important step to make your dish more perfect.
Put 4 tablespoons of sugar, 2 teaspoons of salt and 5 chili peppers in a blender, blend the mixture and pour it into a bowl, then squeeze 1 lemon into the mixture and mix well. The sauce has a spicy taste mixed with the sourness of lemon, the sweetness of sugar and the richness of salt, which is an indispensable part of this dish. Step 4: Grill the chicken
I don't cook chicken at home as usual, but choose an ideal location outdoors to be in harmony with nature, breathe in the fresh air and enjoy delicious food.
Instead of grills, I choose for myself bamboo tubes to grill chicken. In Vietnam, bamboo has existed for a long time and has been attached to the Vietnamese people for thousands of years of history. You will easily find bamboo trees in villages all over Vietnam, whether in the plains or in the mountains, possibly because of its ease of cultivation. I use old but still fresh bamboos because they will be strong, supple and won't burn during the grilling process.
Since it's outdoor, I will use the fire and charcoal to grill the chicken. Using charcoal to grill chicken will make the chicken more delicious, the outer skin will be golden crispy and the meat inside will cook evenly and absorb the spices.
Tadaa... and here is my result! It is really worth the effort and time that I have spent preparing the dish of the day. Grilled chicken with lemongrass aroma, spicy chili dipped in sauce is really great. You can use this dish for outdoor picnic parties or for your camping tripsπ
