I start thinking and there is really no one in my life who does not like cookies, I have never received a negative response when I offer them, much less these traditional lemon cookies.
Everyone is waiting for their cookie on Christmas Eve, so much so that I usually give each member of the family their lemon cookies in a little box decorated with a simple and beautiful ribbon
Lemon Cookie Recipe
1 cup of sugar
Half a cup of butter
2 cups of leavening flour
Grate and add 1 large lemon (if you don't have any, use two small lemons)
One egg yolk
Procedure
Join the sugar with the butter and add the yolk, the lemon juice, the grated rind, and add the flour little by little to form a dough
I use double plastic on top and underneath the stretched dough, leaving it ready to be cut. This dough is going to be refrigerated for an hour before it is baked. For each baking tray we will use the same size cutters so that the baking will be even, the tray should be buttered and a little bit of flour before baking and remember to turn on the oven 180 degrees 10 minutes before entering the tray, bake only for 10 minutes or until golden brown
