5 medium zucchini
3 eggs
1 cup breadcrumbs + 1/2 cup panko
Rinse your zucchini, cut the ends.
Cut them lengthwise into wedges, dry them very very with paper towels.
Beat 3 eggs in a medium bowl.
Add 1 cup bread crumbs and 1/2 cup pank in another medium bowl, add seasonings(garlic powder, onion powder, salt, pepper, paprika).
Grease a large baking tray generously.
Dip each zucchini wedge into the egg mixture, then into the breadcrumbs mixture. Arrange the zucchini on the baking tray, drizzle more oil on top.
Bake at 425F for 20 minutes, then flip them over and bake for 10 more minutes. Add Parmesan cheese on them(optional) and serve with your favorite marinara sauce.
