This is a recipe to show you "How to boost your scrambled eggs without adding too many calories"
Omelettes and scrambled eggs can be of many types, you can boost both with a lot of ingredients. You can basically boost your eggs with everything, from meet to vegetables. However, making a healthy omelette is a different thing.
I prefer mine with ham and cheese but also know it's not exactly healthy as it means too much calories. I'm trying to cut back on calories, so I have to watch what I eat. That's why I came up with the idea of pairing scrambled eggs with cauliflower, that is very low in calories.
Ingredients
- one small cauliflower or a half of a big one,
- 3 free range eggs,
- grated cheese,
- salt,
- pepper (optional),
- olive oil,
Cut and wash the cauliflower. Add to boiling salted water and cook till it's tender. After taking them out of the water I saw these are too big, so I sliced each piece.
I chose three eggs as I thought that's the right amount for the cauliflower quantity I had but you can use as many eggs as you think you need.
Heat one tbsp olive oil in the frying pen, add the beaten eggs, then the cauliflower.
Add grated cheese.
Suggestion - I used two types of cheese here. The more type you add to the mix, the better. I used a lightly maturated cheese and a fresh goat cheese.
Cheese can also boost your scrambled egg calories, so be careful how much you add.

Vegetable Salad
The best thing about this salad is that all the vegetable you see here are from our garden. This year is very different from the other years, due to the pandemic, lockdown and some health issues, so everything is a bit late. Last year this time we had already everything, while this year vegetables only started, this is my first salad.
You can use any of these vegetables, or only some of them, or add others, as you wish, there's no rule here. Wash, peal and chop them, as you like.
Add salt, vinegar and some water and you have your salad.
Another way of making a salad is to add extra virgin olive oil, which is the most healthy when it comes to oil, but that is again something you need to pay attention to. Even though extra virgin olive oil is healthy, it doesn't lack of calories. So use it carefully. Keep the salad in the fridge for half an hour before serving.
This is my suggestion today. This is how you can boost your scrambled eggs with cauliflower, without adding too much calories. It may seem like a strange recipe but it's heavenly good, trust me :)
