Cooking for a loved one who appreciates your cooking is probably a dream of many. I know I always wanted a significant other who would like my cooking. The problem with this is that I cannot always recreate my own recipes. Writing the recipes down, something I do not like to always do, helps with this memory lapse.
My other half, , loves my cooking, something I still cannot believe. But she has a couple of recipes of mine that she always requests. Last night, for example, I made mussels with a turmeric, lemon, lemongrass, ginger, and coconut broth. Tonight, she wanted some prawns with dirty rice. I had some leftover broth of the mussels and what a perfect match!
In this post, I want to share with you my very quick prawn and dirty rice recipe. I used a coconut and lemon broth and I made the dirty rice with coconut milk, the turmeric mussel broth, peppers, and ginger. Please follow along with me as I show you how I made this very simple dish.
Ingredients/Recipe
The recipe uses the following ingredients:
- A lemon,
- An onion,
- Some ginger,
- A couple of garlic cloves,
- Coconut cream,
- Prawns,
- A couple of bell peppers, and
- Some rice.
Method
Like most of my methods, I started by cutting the ingredients into smaller pieces. I cut the onion, garlic, ginger, and peppers into smallish cubes.
I proceeded to cook them on a very warm wok with some oil.
I cooked the small pieces until fragrant. I then added some lemon juice.
Whilst this is cooking, I cooked the rice. If you have never made rice with coconut cream, please try it! It is really the best. I added the turmeric coconut and mussel broth as well. I also added some lemon peel. Cook the rice in your prefered method, I used the microwave:
I then added the cooked ingredients. I call this a dirty rice. It is really something special when you add the coconut as well. I just love it!
Now that the rice is done, I cook the prawns. Obviously, fresh prawns would have been better. The frozen ones tend to have so much water in them when you cook them.
In any case, I added them to hot oil as well and cooked them with the rest of the coconut cream and lemon juice and peel.
The broth was too liquid for my taste, so I added some corn starch! It always does the trick to thicken a broth or sauce.
Plating Up
And there you have it! Such a quick and easy dinner.
I love the combination of flavors. Coconut and lemon really go so well together. And paired with fish, it is something next level. Mussels with coconut and lemon and lemongrass are something everyone should experience. I think I will develop these recipes and more! All because I once overheard a chef discuss this recipe with someone, now it inspires me to cook better and more! Life is so funny sometimes.
