This is a super easy dish to prepare. For the basic version you only need 2 ingredients!
As you know avocado is super food. It has a lot of benefits and I put it very often on the menu. Mostly I use it in a salad, but this time I make a hot dish. This is a good trick when the avocado's are still a bit unripe. Because you bake them, they will become soft!
Some people avoid avocado's because of the high calorie intake. But this is not completely true. It contains a lot of unsaturated fatty acids and monounsaturated fats but these are the "good" fats and reduce the cholesterol levels. They're also a good source of vitamins (C, E, K, and B6), minerals (Potassium, Phosphorus and Magnesium) and fibers.
But enough talking ... Let's go to the kitchen ... I'm getting hungry! 😉
As you can see I use 1 avocado, 2 small eggs and some pepper and Himalayan salt.
First cut the avocado in 2 parts and take out the pit. If you have a small avocado, scoop a bit out with a spoon so you have enough place for the egg.
Season with a bit of pepper and salt.
Break the eggs and put one in each avocado part.
If you wish, add a bit more seasoning on top of it.
I've put a bit of aluminium foil under the avocados to make them steady. I want the egg to stay inside!
I make this in my Airfryer, but you can use a traditional oven as well.
Depending on the size of the avocado's bake them in the Airfryer for 10-15 minutes on 190 degrees C (374 F). For the traditional oven heat till 200 degrees C (392 F) and bake for +/- 20 minutes.
And now the dish is ready! That was easy.
I prefer to add sour cream and some more herbs on top of it. You can also add some cheese, bacon or smoked salmon.
