Let's make an easy stir-fried kangkong. We used to eat this vegetables when we were kids. It is really versatile, and enjoyable no matter how you cook it. Whether blancing, boiling, steaming, stir-frying . Kangkong specialty, is so hard not to love.
Kangkong is a kind of spinach. Green leafy and in mild taste so its absorbs whatever flavours is douse like oyster sauce or soy sauce.
Stir- fried kangkong/ water spinach Ingredients:
2 table spoon butter
1 onion sliced
3 pcs. thai chili or 1/2 table spoon chilli paste
2 tablespoons water
3-inch length kangkong (water spinach) leaves, stems only
3-4 tablespoons roasted peanuts,crushed
red chili pepper, for garnish
1-2 table spoon brown cooking soy sauce
2-3 Table spoon of shrimp paste or shrimp sauce
3-5 cloves garlic minced
Instruction:
1.Saute the garlic using butter , onion, shrimp paste or shrimp sauce and add chilli and roasted peanuts.
- Add water and the brown sauce then simmer for 2 minutes.
3.Stir in kangkong and add bell pepper cook for 2 minutes. Then transfer to a serving plate and serve.
Kangkong is nutritious and delicious; it is a good source of Vitamin A, copper, calcium, and zinc.It is a powerhouse of health/ superfood.Your body will 'thank you ' for it.
