The recipe I'm going to present in today's post was actually about a dish that I tasted for the first time last year which might seem a little bit funny since it's a meal that's very appreciated by the Romanian and Moldavian gastronomy, being prepared pretty often.
Even if it's not a Romanian Traditional Dish but actually borrowed from the Turkis Gastronomy, you can easily meet Ciulama in many of the restaurant menus which you should consider as a must-try.
Anyway, Ciulama is actually the Romanian name of this dish while I'm not sure what its original name sounds like, but to make a better idea of what's everything about, we can consider it close to a Mushroom Soup but definitely not the common one you've eaten so far. - 1kg mushrooms
- 1 onion
- 1 garlic / 10 garlic cloves
- 10g butter
- 1-2 Tbs flour
- 300ml milk
- 2Tbs oil
- salt, pepper, dill
For the beginning, I started by peeling the mushrooms and then washing them to make sure there is no dirt left on the surface. Some people keep the leg of the mushroom intact while some just take it away or simply separate it from the body. Personally, I decided to use it in my recipe too but just separate it from the body because the mushrooms were quite big.
After you finish peeling and washing the mushrooms, you can start cutting them into smaller pieces which really depends on how big the mushrooms are, but keep in mind that these will decreases their size by around 50% so cutting each mushroom in 4 or 6 pieces should be enough.

Still before starting the cooking process, you should finely chop an onion that will be added next to 1-2Tbs of oil in the cooking pot and saute it for around 3 minutes until it becomes soft.
After the onion becomes softer, you can add the mushrooms along with 1tbs salt and 1/2 tbs pepper and let it boil for 10 minutes.
Again, don't worry about the size of the mushrooms or having the pot too full because the final result will only be maximum half of what you see now.
After 10 minutes you will see that most of the composition will be decreased and it's the right moment to add some dill and the chopped garlic which can be either an entire garlic or just a few cloves of it depending on how predominant you want the taste of garlic to be. Personally, I enjoy food where the taste of the garlic is quite strong but you can adjust it on your preferences.
After you add the garlic, let everything boil until there is no liquid left in the pot, but only the mushrooms.

After the liquid is close to disappearing, you can add 10g of butter and mix it with the mushrooms until it's melted and then add 1-2Tbs of flour which will be mixed again until it gets incorporated with the rest of the ingredients. From now on, make sure to cook on low heat.
After the flour is also incorporated, it's time to pour gradually the milk while you keep mixing the mushrooms. Add another tbs of salt and any other spices you enjoy in your food, and keep mixing for around 10 minutes still on low heat.

There is another option to have only half of the milk I used and replace it with sour cream but this might turn out a bit too greasy, so I prefer to use only milk. After you mix everything for 10 minutes you will notice that the liquid will be thicker which is the composition we are looking for to consider the recipe a successful one.
Even if there might seem like still being way too much liquid, the mushrooms will absorb it during the time so it's absolutely fine.
Still on the same recipe, you can consider adding chicken which is something that I promised I'll try one day, but so far I enjoyed this dish just with mushrooms in it.
