Hello foodies! Long time no see, right? Well, the wait is over because I'm back with another personal recipe that I enjoy making from time to time, especially since it's a lot healthier than anything you would get from fast food.
The funny part is that I've only found out what a kebab/gyros/shawarma is in my 2nd year of college because I've always thought it's gross to have so many ingredients mixed together other than being part of a pizza, lol.
Anyway, as tasty as I figured out these are, as quickly I realized that it would be literally impossible to eat them all at the same time if there isn't a lot of mayonnaise and sauces in it which helps to be faster accepted by our stomach, but which equally adds hundreds of kcal in just one meal. So here's my personal recipe to avoid all that and be more sure about what you are actually eating.
- 200g of meat (I used chicken breast)
- french fries
- 2 tomatoes
- 200g cabbage
- 4 pita
- sweet chili
- otional: cucumber, capsicum, onion rings, etc
The first thing I've done was to get ready all the ingredients that I'll use to assemble the kebabs later, so I started to grate the cabbage and cut in small slices the tomatoes and other vegetables you might consider adding.
The next step was to spice the meat where you can either keep it simple with some salt and pepper or go extra with more ingredients like dill, oregano, and more.
Personally, since I was going to use a sweet chili as the main sauce of my recipe, I decided to only add salt and pepper but it's a quite flexible meal where you can adapt everything to your taste.
For the cooking part, I only needed to take care of the potatoes and meat where for both of them I used the air fryer to avoid obtaining greasy food due to all the oil these would normally need to be soaked in to get in their final form.
If you don't have such a kitchen machine then you can cook them in oil but after they are ready consider letting them on a towel to get rid of some of the oil because it will change the taste of the kebab a lot.
For the air fryer, you can either cook them together or separately such as the french fries at 200°C for 20 minutes, mixing everything after 10 minutes, and the meat at 160°C for 20 minutes also mixing everything after 10 minutes but then keep the parts of the meat for another 10 minutes at 180-200°C.
Usually, I add everything together and let them at 160°C to be slowly cooked instead of rushing things because I prefer soft food over wizened ingredients.

After you have the meat and french fries ready as well, while they rest for 2-3 minutes you can start preparing the pita by greasing the pan with oil and leaving each side of the pita for a few seconds until it forms some air bubbles under it.
The scope is not to cook the pita but only to warm it to become more flexible when you will add all the ingredients inside it. However, doing this before you have all the ingredients ready, will make it become harder than originally was and it will break while trying to roll it.

The final step before enjoying the tasty results is assembling everything together. I usually start by first adding some sweet chili to the pita, being followed by the grated cabbage, french fries, chicken breast, and then tomatoes or any other vegetables you might use. I end the whole process by adding some more sweet chili or any other sauce and then roll everything together.
Here's how everything turned out, the current recipe being for 4 kebabs because you can never have just one, right?
Don't worry, I haven't eat them all by myself but I usually prefer having two of these, lol. 😃
Anyway, if you are not usually eating meat, you can prepare one of these only with vegetables.
It's something that I have in mind to try one day but I don't have a recipe ready for it by now.
