Food lovers, hope you are healthy and happy. Thank you Foodies bee hive community. This time I will try to cook Balinese betutu chicken.
Indonesia has many Island, one of which is the Island of Bali. The Island of Bali is famous through out the World for its beautiful nature, and strong with its culture and traditional.
One of them is the Betutu chicken dish, this dish is famous on the Island of Bali and is the culinary of the archipelago, according to Balinese tradition. Betutu chicken is usually several at traditional ceremonios.
I will cook chicken betutu at home, as for the ingredients and spices that will be used such as:
- 1 chicken * 2 centimeters grated ginger * 1 teaspoon salt.
- 100 grams of boiled cassava leaves * 2 centimeters of galangal in georek * 6 lime leaves thinly sliced * 2 lemong rass stalks finy sliced * 1 teaspoon salt * 3 tablespoons oil for frying * 3 banana leaves for wrapoing * enough aluminum foil.
Softened seasoning
- 20 red onion * 8 cloves of garlic * 5 pieces of cayenne pepper * 2 centimeter kencur * 3 centimeters of turmeric on fire * 1 tablespoon coriander * 5 hazelnuts roasted * 1 teaspoon of shrimp paste.
Step of the cooking process
Step 1 wash the chicken,then coat with the chicken,then with grated ginger,1 teaspoon salt, let stand about 20 minutes.
Step 2 heat the oil, then stir fry the ground spices, enter the galangal,ginger,lime leaves, lemongrass,and salt,stir fry until fragrant.
Step 3 take 1/3 of the stir fry, seasoning, then mix it with the boiled cassava leaves and put it in the chicken.
Step 4 coat the chicken with seasoning stir fry all over the chicken until blended.
Step 5 wrap the chicken in banana leaves and aluminum foil.
Step 6 steam the chicken until cooked trough, about 90 minutes.
Step 7 oven chicken wrapped, chicken condition, about 25 minutes,
Remove the chicken and sprinkle with fried peanut.
The betutu chicken is served with chili sauce (shallits,cayenne peper,tomatoes,all sliced and added with oil).
