After three days of pasta meals last wee, finally we got to switch to another type of meal. I had learned that using oven to cook could be fast and easy too. Without thinking much due to I was still doing hourly tube-feeding for my youngest son, I quickly cooked this. It was not bad after all.
Baked Fusion Chicken Legs with Carrots and Potatoes
Marinating the chicken legs
We had three chicken legs — one for husband, one for me and one for my eldest son. Youngest son couldn't eat that time.
Honestly, I had no idea what was I doing because I was doing it in a hurry, considering my youngest son still in pain and would ask for me. In the end, I marinated the chicken with paprika powder, cumin powder and coriander powder, added in some olive oil, and then suddenly my Chinese style of cooking intertwined in my preparation, my brain sort of got haywire, I accidentally added in soy sauce too. Oh my! So, knowing it was a mistake, I just ignored and continued adding salt and pepper. Left them to marinate for one hour.
So, I sort of like mixed western herbs with chinese seasoning, it was like a fusion chicken bake! I was nervous of the outcome. It would be either yay or nay.
Veggies first
My eldest son and myself preferred our carrots and potatoes slightly softer, so after I preheated the oven, these vegetables went in first for 30 minutes at 180°C cooking.
Nothing elaborate for the seasoning, just a tablespoon of olive oil, salt and pepper. It was half cooked for us. Then, they would continue to be baked together with the chicken.
Baking the chicken legs
In a baking tray, I layered the aluminium foil, followed by arranging the potatoes and carrots. And then the last layer would be chicken legs. This whole tray went into the oven for baking at 180°C for 1 hour!
Baking... Baking... Baking...
One hour later
Just look at how perfectly they were cooked. With the crispy skin and also the juicy tender chicken meat, plus all the carrots and potatoes were well cooked too, just the nice texture of softness for us.
To my surprise, the fusion type of seasoning tasted so good — flavorful. It had that tinge of herbs yet some saltiness and sweetness and tanginess from the soy sauce. Lol... We were all surprised. I was telling my husband that the meals might taste weird. Good thing it was the opposite! Phew! T'was my lucky day. My husband only ate the chicken with the sauce, my eldest son and myself enjoyed the chicken legs with the carrots and potatoes.
Such hearty meal!
My eldest son enjoyed this meal with his favourite chilli flakes. Recently, he is into chilli flakes, anything also want to top with it. Yums!
