How's everyone doing? The winter is here . It's getting really cold in Himachal Pradesh. In this blog, I will share with you all a warm and delicious recipe which is called as ' Makki ki roti and sarso ka saag' . It is a popular vegetarian dish from the northern region of the Indian subcontinent. It is closely associated with Punjab and is eaten especially in the winter season.
Sarson ka saag is made from mustard greens and makki di roti is made from corn Flour . To make this recipe , you'll need the following ingredients.
Mustard greens - 5cups , radish greens- 1cup , Fenugreek greens - 1cup , water - 2cups ,rice - half small bowl , powdered corn - 3 cups , mustard oil - 4 tablespoon , coriander seeds - 1 tablespoon , dried red chillies- 4 to 5 , red chilli powder- 1 teaspoon , cumin seeds- 1 tablespoon ,salt - 1 tablespoon and water- 1.5 cups.
Mustard greens contains calcium which is good for bones . It is very rich in antioxidants includes vitamin A , vitamin C, vitamin K and vitamin E. These are very good source of iron . Corn flour energizes the body and improves psychological functions.
I will first explain how to prepare yummy sarson ka saag like a himachali . First , we need to wash the mustard greens , radish greens and Fenugreek greens very thoroughly. We need to chop all the greens into small pieces.
Now, we will hydrate the rice for 10 minutes. We will take the pan and add all the chopped greens in it and add 2 cups of water in it . Cook for 45 minutes on medium high heat . cover and let the greens cook till they become soft . Give it a stir and add the hydrated rice in the pan and let it cook for 10 minutes.
We will take another pan , add mustard oil in it and let it heat for 2 minutes.
Now , we will add the dried red chillies and let it turn brown .
Add coriander seeds, cumin seeds,red chilli powder and salt in the pan and give it a stir.
Add the boiled mustard greens with rice in the pan and give it a mix and put this on medium heat for 5 minutes and your sarso ka saag is ready .
Now , it's time to make makki ki roti or corn flour bread .
Add the corn flour in a bowl and add water in it slowly slowly and start kneading it . Knead to a smooth and soft dough without any lumps.
Now , make round big balls from the dough. Roll the balls till smooth in your palm . Take the ball and flattens with your fingers to a round shaped bread .
Put the iron tawa (hot skillet) on medium heat and let it get cooked.
Once you see thode dark spots on one side , flip it to the other side to also get cooked properly.
Now,put the roti on direct heat with the help of tongs and let it cook . Makki di roti is ready.
Serve hot sarso ka saag topped with generous amount of butter and ghee with makki ki roti.
