Peshawari Jaggery

People in Pakistan mostly use this jaggery with coffee. The meal of Pathans is incomplete without Peshawari jaggery. Peshawari jaggery has this feature that it does not have to be chewed with the teeth but it dissolves when placed in the mouth. Most people in Pakistan use it in winter.
"Chocolate jaggery"
This jaggery is called chocolate jaggery only because it is soft like chocolate. This jaggery is also found in the city of Peshawar in Khyber Pakhtunkhwa province of Pakistan. This jaggery is very tasty. We use it mostly after meals.
"Tea jaggery"
As the name suggests, this jaggery is mostly used as an alternative to sugar in tea. Tea made from this jaggery has its own taste. The best thing is that there is no harm in tea made from this jaggery. Rather, it is beneficial for health.

How to make jaggery
First of all, take the sugarcane and peel off the unnecessary skin from it. Then put the sugarcane in the grinding machine and extract its juice. In the picture below, you can clearly see the sugarcane juice extracted from the sugarcane machine. The juice is going through a nickel pipe into a big vessel.
Then the juice is collected in the pot which we call Karaya in our language. The juice is cleaned by taking a thin cloth. Then filter it very well.
After cleaning, in the next step, this juice is placed on fire in a vessel.
Then cook this sugarcane juice on fire about one hour and twenty minutes . You can also use cardamom in it according to your taste. Using cardamom will make it taste better and it will give a very sweet flavor.
After cooking completely .When the sugarcane juice thickens well, take it off the fire and keep it to cool down. When this juice cools down well, take it out of the big pot.
Remember, it is important to keep skimming the scum as long as the juice remains on the fire.
Then take it out in a bowl and stir it with a spoon. Leave it to cool for half an hour. When it cools down, cut it into small pieces with a knife.
