I love hot sauce with anything. And I can go through a bottle really soon. So, I thought I would make a bottle of green chili sauce and red chili hot sauce to get me through the next month or two. And this is how I made it.
Let’s start with the Red Chili Hot sauce first.
Ingredients
Red chili – 100 grams
garlic – 4 cloves
Onion – ½ small onion
Vinegar – 1 cup
Apple cider vinegar – ¼ cup
Salt – ¾ tablespoon
Method
Put all ingredients in a pot and bring to a gentle simmer and let it cook for 20 minutes.
Let it cool.
Blend and make a fine paste.
Sieve the paste, so you get a fine sauce.
Give it a taste.
Store in the refrigerator.
And its done. It took me about 1 and half hour to make this sauce completely. It does taste delicious and might I add better than the ones you buy at the store. I don’t think I would ever buy the store-bought ones anymore.
Now, let me tell you how I made the green chili sauce
Ingredients
Onion – 1 small
Garlic – 5 cloves
Green chili spicy – about 7
Banana peppers – 200 grams
White vinegar – 1 and ½ cup.
Salt
Method
Blend the green chilis, onion and garlic to a fine paste.
Heat a pan and put the paste along with salt and vinegar and cook for 15 minutes.
Give it a taste and transfer to a jar.
It does taste good but nothing like the store-bought ones. And I know I will finish it in the next couple of months. If there is anything I would do differently next time, I would add more vinegar and reduce the banana peppers to 100 grams and increase the spicy green chili to maybe 15.
Thank you for reading.
I cook every day. Well, almost every day. And there are days where I cook multiple recipes. Having said that, I am not an authentic or professional chef. Many of my recipes are experiments as I try to adapt and use the ingredients I already have.
My mantra is you should cook food just the way you like it. I don’t mean any disrespect to traditional methods of cooking or any cultures where the cuisine originates from. But I merely try to cook it with what I have and what is available to me and sometimes, I add ingredients that I want to use up.
