Chicken Afritada is a tomato sauce based food, and was brought and introduced by the Spaniards during their colonization to the Philippines way back hundreds of years ago that lasted until 1898. It came from the Spanish word "Fritada" which means fried or cooking by pan-frying.
Nowadays there are too many versions of this recipe, For this blog I will teach you how to cook my own "Simple Cheesy Chicken Afritada"
The Philippines have too much variation of dishes with tomato sauce like Menudo, Mechado, Kaldereta, Bakareta and Chicken Afritada is one of the most famous. It is usually cooked with potatoes, peas, meat and with that orange thick stew. But for this recipe I will not put peas on it because I can't find it available in any nearby supermarket, so I decided to add some carrots on it.
So Join me and let's cook together:
- Boil the chicken, and set aside the broth for later use. While boiling your chicken sliced and cut your needed ingredients.
- Heat the oil in a cooking pot. SautΓ© onion and garlic.
Add chicken. Cook for a minute. Turn it over and cook the other side for another minute.
On a separate pan, just pan-fry your carrots and Potatoes. Set aside after.
- After Chicken turned slightly brown on both sides, put your fried potatoes and carrots and mixed it well.
- Pour tomato sauce and chicken broth. Cover. Let it boil.
Cover the cooking pot. Continue to cook in medium heat for 25-30 minutes.
- Add some slice or grated cheese then let it simmer until cheese is melted and sauce is reduce and thickened.
- Season with salt and ground black pepper and cook for 2 minutes.
- Now it is ready to serve.
