Ain't it weird how one's mood can change in the blink of an eye; one moment all doom and gloom and the next it's time for jubilation!
Well, that's how I felt when I heard that BnB's and Hotels can at least open up to Business guests without having to get permission from the Ministry of Tourism for each booking!
So at least we're back in business, just waiting for the bookings now!
Of course this still means a whole lot of fighting to stay afloat, having to change strategies and focus, but hey, we'll put on our boxing gloves and tackle this fight with gusto!
Our trainees will soon return as our little Lily's Cottage is a local training centre's preferred provider, so we should be back on track soon!
I could have invited you for cocktails as we can once again buy alcohol, but only from Mondays to Thursdays at certain hours; no tobacco sales though!
Another good thing happened this week - our Lockdown regulations have been declared invalid and unconstitutional by the High Court.
The judge identified a number of instances of irrationality in the regulations.
“The examples are too numerous to mention,” he said. “One need only to think of the irrationality in being allowed to buy a jersey but not undergarments or open-toed shoes and the criminalisation of many of the regulatory measures.”

Our economy has been destroyed with many job losses and thousands of people facing starvation as a result of our draconian lockdown; but it is heartening to see the number of initiatives by NGO's in alleviating the plight of these unfortunate people.
This was at our local supermarket Pick n Pay.
Last Friday I was in a real fighting mood as things did not look good for us, but today it's time for a Food Fight Friday mini celebration so you're all invited to my tea party as I can offer you all a cup of traditional South African Rooibos tea which I spoke about a while back; a perfect pairing with a big slice of French Apple Cake with an African twist.
This soft spongy flavoursome cake with a touch of cinnamon has little cubes of apples resting inside the sponge; really yummy!
I cannot take credit for this recipe as Granny Google came to the rescue when I started searching for something with Apples; I wanted anything but an Apple Pie as I've been making way too many of those!
I found a French Apple Cake created by the super talented chef and author Jenn Segal; and after making it I can see why there are over a thousand reviews with an average rating of 5!
I changed the ingredients ever so slightly, but this definitely is going to be one of my new favourites!
Cream together:
- 125 gram softened Butter
- 2/3 cups Sugar
Add and beat:
- 2 Eggs
- 1 tsp Vanilla essence
- 3 Tbsp double cream Yogurt
Add and mix well:
- 1 cup Self Raising Cake Flour
- 1/4 tsp Cinnamon
- 1/4 tsp Salt
Lastly stir in:
- 2 Granny Smith Apples, cubed
Spoon into lined spring form cake pan & bake at 170°C for approx 40 min, test if cooked till a thin wooden skewer comes out clean when inserted.
Sprinkle Cinnamon Sugar over the top & leave in pan till a little cooler.
