Thought I had it all under control until I opened the pantry door!
I'd planned on making a comforting Macaroni Cheese for Day 13 of lockdown, but there was no pasta to be found anywhere in that pantry!
First letdown; I'd ordered groceries online before our lockdown was announced; delivery was scheduled for Tuesday, but that order never arrived. First hint that all was not well was when my credit card was not debited, so I tried calling and emailing to no avail; that delivery never happened!
All my carefully laid plans shattered and now again with this meal!
I told everyone the other day in my Fattening up the Family during Lockdown how the roles have been reversed with our son calling the shots in warning Mom & Dad to stay away from the shops; endless Youtube videos on sanitizing groceries and immune boosters to take etc etc!
Back to my dilemma, I still had a little flour in the cupboard, and eggs, but not much time as dinner time was looming and I always start cooking at the eleventh hour!
Making my own pasta was out of the question as that would take way too long.
To add to my dilemma, when you have a type 1 diabetic in the house who must have meals at regular times there's just no other way, so time was of the essence.
How about making some pancakes and using them as my pasta sheets?
Not sure what to call this but I guess Pancake Pasta Bake will do - filled with a fresh sweet Basil, Tomato and Onion Sauce, rolled up and topped with a cheese sauce, more cheese and crispy Bacon, this Pancake Pasta Bake was really delicious!
For my Pancake batter I beat together:
- 1 Egg
- 1 1/4 cup Water
- Pinch of Salt - the salt of the earth they call a good person; someone with good qualities, can't make any good food without salt now can we!
- 1 cup Self Raising Flour
This mixture made 4 large pancakes.
I'm not a big fan of canned food, prefer my veggies fresh but during times like this I will gladly open that can, so I sauteed:
- 1 diced Onion
- Handful fresh Sweet Basil
- 1 can diced Tomatoes
Made 2 cups of a thick Cheese Sauce.
Filled pancakes with tomato & onion sauce, rolled it up, topped with the last bit of Feta Cheese & remaining Tomato sauce.
Final topping of Cheese sauce, grated Cheese & diced Bacon.
Popped under the grill to cook and crisp the Bacon pieces.
Voila, we have ourselves a Pancake Pasta Bake!
Served with Sprouts which has been coming out of our ears since the son told us it's a great immune booster; this was a really delicious alternative to good old Mac & Cheese!

I've really missed the gang and just can't wait to see what everyone's bringing to the table now that we have restrictions with most of the world in lockdown!
I know... I know... it's still Thursday, but as 'm always late to the party I hope to beat the crowds this time; we have been told to practice social distancing not so!
Dang! Just heard the announcement that our lockdown is being extended till end of April so that will be five weeks of South Africa at a standstill! We can only go out to buy food or medicine; no going to the beach, walking the dog, no jogging, but at least we have plenty of time for cooking and baking and gardening and diy and watching tv and reading and blogging etc etc. All businesses are closed except those manufacturing food and other essential services, so no guests in our bnb and you know what that means not only for us but for many of the small businesses out there who do not run businesses with a big profit margin!
I can just imagine how difficult it must be for people who live in cramped conditions or have no garden or no home for that matter and also no formal employment!
We can still count our blessings!
