It's me again. Sharing with you today our afternoon snacks and I would love to share with you the step by step procedure on how did I made this recipe.
Commonly we Filipino call this type of rice cake as "Palitaw" it is usually made with glutinous rice flour, eaten together with sugar and sesame and it can be stuffed by sweets inside whatever you want. But today I'm making this a simple refreshing snack.
Yesterday, When I went to the kitchen I noticed that I have leftover ingredients so decided to think of a recipe for a snack today and I came up to make a rice cake.
From my leftover glutinous rice flour and sesame seeds, I bought sugar and I climbed some fresh young coconut in our short coconut tree for my recipe to do for the kids.
It's nice to make good snacks that include coconut besides its delicious and invigorating taste coconut is very well known also for its nutritional benefits.
5 Ingredients I used
- 3 cups glutinous rice flour
- 1 cup water
- 1 young coconut meat
- 1/2 cup sugar
- 3 tablespoons sesame seeds
preparation
- First, I prepared the coconut by removing its husk to shred the coconut meat easily.
- Second, I prepared the rice cake mixture which includes glutinous rice flour and water, combine thoroughly and I made them into balls so it's easy to flatten when it's time to cook but first let it rest.
- Third, was to prepare the sesame seeds, I toast them into medium brown set them aside and cool down.
cooking procedures
- Fourth step is to cook the mixture into a rice cake. In a pan, you have to boil water enables to cook the rice cake.
All you have to do is to flatten them with your hands and if you find it hard use water if necessary.
- Fifth, cook until it floats, you can determine that is cooked already when the rice cake is already floating. Just let it drip to remove excess water.
- Sixth, dip into shredded coconut meat.
- Seventh, combine toasted sesame seeds and sugar for a dip and to add extra sweetness.

If you like this recipe and you don't like too much sweet it's optional to use sugar since young coconut meat is already sweet.
