Squid is inexpensive, easy to find , and delicious. There are plenty calamari recipes in Asia mostly with soy sauce or sweet sour and spicy sauce. But today, I am trying something out of the ordinary; a healthy, simple, but nutritious calamari recipes. This recipe dressing was an experiment using sesame dressing. For extra healthy and light dressing, you can swap it out with your preference.

Ingredients
- 1 ounce calamari
- 1 tomatoes
- 4 cloves garlic, finely chopped
- A thumb of ginger, finely chopped
- 5 champignon mushroom
- A small bundle of watercress
- 1 cup of carrots
- 1 cup of small cucumber
- 1 spring onion finely chopped
- 1 tbsp cooking oil
- 1/2 tsp salt
Dressing
2 tbsp sesame dressing
Half lemon
oregano (optional)
Directions
- Clean calamari innards and wash it with cold water
- Chop the clean calamari
- Clean all the vegetables(carrot, cucumber, watercress, mushroom) and wash them. Chop them as you like
- Finely diced the ginger and onion
- Boil calamari for 1-2 minutes, don't boil it for too long
- Turn on high heat to heat up the skillet
- Add 1 tbsp of cooking oil
- Saute garlic and ginger until it soften
- Add mushroom, carrot and cucumber
- Saute them together for 5-10 minutes & add salt
- Add boiled calamari into the skillet
- Saute them together for 5 minutes in low heat and let it rest
- Pour the dressing into the mixing bowl
- Add chopped watercress
- Pour the mixed vegetables into the bowl
- Squeeze a lemon and add chopped spring onion into the bowl and mix them together.
- Serve it while it's hot or chill it for 3 hours

This recipe best to serve while chilled but you can eat them directly too. If you want to be ultra healthy, you can swap the cooking oil with extra virgin olive oil or you can use coconut oil. You can also add bell pepper or any green veggies you like.
I choose sesame dressing because that's what I currently have in my pantry. You can try using lighter dressing with only lemon or its variations to give zesty flavor to it. You can also add some seeds or sprinkled a bit of sesame to add nutty flavor to it. All in all, this recipe is mixture of zesty, nutty, and fresh flavor. I suppose, an Italian dressing would go well with this salad. To be more filling, this main course salad can be paired with pan seared fish.
This recipe is super easy to try at home. Don't get intimidated with the steps because it's all about chopping and mix the ingredients into a bowl and dress it however you like. Also don't worry because the calamari won't taste fishy.
