Today at Christmas lunch I want to share with you a typical recipe of my land!
"Baked pasta (anelletti)".
Ingredients for 4 people:
-2 Onions
-1 Clove garlic
-2 Carrots
-1 Stalk of celery
-2 Bay leaves
-3 Bottles of tomato sauce
-1 Smoked scamorza cheese (300g)
-1 Egg
-600G Pasta anelletti
-500g of pork sausages
-500g of minced veal
-Grated parmesan
-Bread crumbs
-Oil
-Salt
-Pepper
Let's begin...
I chop the carrots, celery and onions; We put a drizzle of oil in the pan, and fry the carrots, then add the onions, celery and garlic clove!
In one corner, we brown the pork sausages. Once golden, remove them from the pan and put the minced meat in the cooking juices. We raise the heat and brown the minced meat well. At the end we blend with a good glass of red wine!
When the alcohol in the wine has gone, add the three bottles of tomato sauce, and a bottle of water (the sauce is very long cooking, so at the beginning of cooking we stretch it with a bottle of water, because then it will concentrate) .
We season with salt, pepper; add two bay leaves and the sausages we browned earlier.
We cover and cook over very low heat for at least 5 hours.
When our sauce has rested and we are ready to cook the pasta, we fill a pot with water and put it to heat. We weigh 600g of pasta, when the water boils, add a nice spoonful of salt, put the pasta that needs to cook for 6-7 minutes. Drain the pasta, and leaving it in the pot without water, add ladles of sauce. With the help of a wooden spoon, we mix the pasta well ... The sauce must envelop it completely!
Cut our scamorza cheese into cubes, oil our baking pans well, and set the "dough" inside them.
Now we are ready to bake our pasta. 180 ° for 30-35 minutes!
Let it rest for at least 15 minutes, and we are ready to cut and serve!
When we have finished setting the pasta in the pans and added the remaining sauce, we beat an egg and with the help of a brush, we sprinkle it over the pasta. We need this to form a nice crust after baking.
Add a little breadcrumbs and grated Parmesan cheese.
