Hi, foodies in the Hive!
I hope everyone is well. Today I want to share my recipe for chickpea waffles. They are flourless and gluten-free :)
These chickpea waffles are healthy, nutritious, and easy to prepare. However, they may be a little dry for those who are used to eating only conventional waffles. In this recipe you won't find any flour, sugar, butter, milk, or gluten; so you might find a great breakfast ally if you are avoiding any of these items in your diet.
You'll have a high-fiber, high-protein breakfast that will sustain you for many hours--more if you add dark chocolate bits.
For 3 cups of batter or 6 waffles, you will need:
- 1 cup raw chickpeas
- 2 cups of water to boil the chickpeas
- 1 or 2 cinnamon sticks
- 2 eggs (1/2 cup)
- 4 tablespoons olive oil
- 4 tablespoons of honey
- 3 teaspoons of vanilla essence
- Pinch of salt
- Dark chocolate bits (optional)
Time to prepare the batter! First of all, we must let the chickpeas soak in water for one hour.
Drain the chickpeas and boil them in two cups of water for one hour. Add a cinnamon stick or two and a pinch of salt to provide a bit of contrast.
When an hour has passed, remove them from the heat and let them cool. After about another hour, they'll be cold and you'll notice that they've doubled in size compared to the raw ones.
You'll see that you can split them and crush them a little by pressing them with your fingers.
They are now ready to be processed in the blender along with the rest of the ingredients.
Blend the ingredients until well integrated, if you see that the blender is working hard, it is because a little water is missing. Add just a little, until the blender can process smoothly.
Now we can immediately pour our mixture into the cold waffle iron. In my case, I need one cup of mixture for every two waffles. Let them cook for 10 minutes.
If you want the waffles more tender, just add a cup of water to the mixture and let it rest in the refrigerator until the next day.
Since the mixture is quite dry, these waffles are ideal for spreading with honey, cane honey, and jams; today we had them with smoked ham and fresh cheese.
In the afternoon, we'll eat a couple with the chocolate bits. I have the leftover mix for another 4 waffles ready in the fridge.
