Here's one of my favourite recipes.

INGREDIENTS
1kg chicken wings
2 cups bread crumbs
2 heaped table spoons oregano, chopped
2 heaped table spoons Thyme, chopped
2 heaped table spoons Rosemary, chopped
3 garlic cloves, crushed
1/2 table spoon salt
1 teaspoon cracked black pepper
1 cup flour
3 eggs whisked
DIRECTIONS
Combine spice mix in a bowl and mix.
Place one cup of flour on a plate. coat a piece of chicken in flour. Dip into whisked egg to coat. then dip chicken into spice mix to coat. Repeat process until all chicken is coated. (for an extra crispy hit try double coating by redipping into egg and bread crumbs)
TO COOK
Preheat oven to 200C. Line chicken on a baking tray brushed with olive oil (can use baking paper)
reduce oven to 180C and add chicken to oven on tray.
cook for 10 – 12 minutes then flip chicken and cook the other side for a further 10 – 12 minutes or until golden. Be sure not to cook for too long or chicken will become dry.
