I think it's important to have a healthy balanced diet and I often alternate between different types of meat.
The staples at home are typically Pork, Chicken, Lamb and beef and on the rare occasions fish. That's probably the core meat groups for most western cultures Although Australia does tend to produce a lot of beef and lamb.
I tried my hand at something new and I wasn't disappointed. A slow cooked beef brisket. I've never really eaten this cut of meat before as I often slow cook beef cheeks as they are absolutely divine!
Instead of a thin beef brisket I went for a thicker one so I could cook it for longer and not have it fall apart before it was ready.
I coated it in a spice rub of paprika, garlic powder, onion powder, salt and pepper then cooked it on high for 8 hrs in beef stock, apple cider vinegar, sugar, tomato sauce and oh my! Absolutely wonderful.
