Hi guys, today I would like to share with you this super easy and super-fast recipe for a delicious Italian dessert, the lemon & ricotta cake. I can assure you it is a recipe worth to be repeated.
Ingredients:
- 170g butter (softened)
- 300g sugar cane (I've used brown sugar cane)
- 500g whole milk ricotta cheese
- 135g flour
- 3 large eggs 🥚🐣
- 1 teaspoon vanilla flavor
- 1 large lemon, zested and juiced 🍋🍋🍋
- ½ teaspoon baking soda
- ½ teaspoon salt
- powdered sugar (optional)
Preheat oven to 180 degrees C. Take a springform pan (23 cm) and grease it by using butter and powdered sugar.
In a large mixing bowl or in a mixer, mix together the butter and sugar.
Then add in the eggs and mix all together.
Add the ricotta cheese and blend together for about 3 minutes.
Add the lemon zest, vanilla and lemon juice and mix once agail.
Separately mix the baking soda, salt and flour and add them to the first mixture, unify all.
Put the mixture into the springform pan and bake for 50 minutes.
Let cool for about 15 minutes, then remove the collar and base of the pan.
Powder it with sugar before serving.
