Hello fellow foodies of the bee hive community! Today, I'm excited to share with you a recipe that has been a staple in my household for years - mix vegetables with potatoes, carrots, peas, and fenugreek.
This dish is not only delicious but also nutritious, as it's packed with a variety of colorful vegetables. Potatoes provide a great source of carbohydrates, while carrots offer an excellent source of vitamin A. Peas are a good source of protein, and fenugreek is rich in iron, potassium, and calcium.
To start, gather the following ingredients:
2 medium-sized potatoes, diced
2 medium-sized carrots, sliced
1 cup frozen peas
1/2 cup fenugreek leaves, chopped
1 medium-sized onion, finely chopped
2 cloves of garlic, minced
1 tsp ginger paste
1 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
Salt to taste
2 tbsp oil
Instructions:
Heat oil in a pan over medium heat. Add cumin seeds and allow them to splutter.
Add chopped onion, minced garlic, and ginger paste. Sauté until the onions become translucent.
Add diced potatoes and sliced carrots. Stir to coat them in the onion and spice mixture.
Add turmeric powder, red chili powder, and salt to taste. Mix well.
Cover the pan with a lid and let the vegetables cook for 10 minutes. Stir occasionally to prevent them from sticking to the bottom.
Once the potatoes and carrots are tender, add frozen peas and chopped fenugreek leaves. Mix well.
Cover the pan again and let the vegetables cook for another 5-7 minutes or until the peas are cooked.
Serve hot with roti or rice.
