Living independently has given me opportunities to discover more of myself.
Before, I was more into watching videos, and movies, sleeping for hours, and doing tiktok dance (though I am not into dancing, just to go with the trend and to consume time). Lately, since I am alone in the house, I engage more in planting, cooking, and making desserts. Thus, making myself a little more productive. Being solo handed me unlimited avenues of exploring and making the most of my time.
For today's blog, I will take you with me as I venture into simple cooking, as I make a creamy and meaty penne pasta.
Here are the ingredients:
I pack of San Remo penne pasta (any brand will do)
1 can of tuna
1 can of mushroom
250 ml of all-purpose cream
1 cup of milk (evaporated)
160 g of cheese
1 spoon of butter
1 whole sliced onion
slices of ham and bacon (optional)
pepper
salt
Here are the easy steps to follow.
✅Apply butter to the heated pan. (You can use oil if butter isn't available.)
✅Put the minced onion, preferably with garlic to have that perfect aroma. (I ran out of garlic so onions will do the work.)
✅Put the can of tuna and mix. (I had it spicy because I prefer it that way.)
✅Add the mushroom and mix.
✅After two minutes of mixing, add the all-purpose cream and the milk. (It should be evaporated milk but I didn't have the stock, so I replaced it with fresh milk.)
✅After letting it boil, add the cheese. (I just use half of the 160g).
✅Season with pepper and salt, according to your taste. Mix and let it boil again. Set this sauce aside.
✅Cook the pasta. Put some salt and oil. When the water boils, put the pasta and cook it for 12 minutes.
✅After cooking the pasta, mix it with the sauce. Top or mix it with the sliced fried ham and bacon. (This is optional. These were my breakfast leftovers. I just like my pasta this way, meatier. The meatier, the happier.😂)

Not bad for a first-timer though. According to my food critic, it tastes like a restaurant menu. I don't know if he was serious but he finished two plates.😂
MY REALIZATIONS ON LIVING INDEPENDENTLY
1. Freedom. It feels like being uncaged whenever I get to do whatever I want without any hesitations as somebody might reprimand me. I can do just anything I want. Freedom is power. Hahaha
2. Me time. My introverted self approves this hundred percent. I get to think about things, plan, and decide- all these on my own. I get to process my thoughts and reassess my decisions in life.
3. Learn new things. I get to challenge myself that learning new things is never too late. I can explore, challenge my own boundaries and become limitless.
Being alone is never scary for me. With all the chaos happening around us, the noises, the grand and extravagance, sometimes what our hearts need is simplicity, silence, and alone time. So, do not be afraid if you're alone because there is beauty and freedom in it.
