Today's was my step daughter birthday, she turns nine and she is really a seafood lover, not like her dad ! But I made a meat appetizers for him too.
So I decide to prepare something special for lunch, all made by seafood from the appetizer to the others dishes!
For the first appetizers, the recipe it's easy, I brough some soft bread at triangle, I put on them some mayo, and some tuna, I brought the tuna in the box with oil so it's easier, than I put on them a slice of artichoke. The one pickled. For the meat appetizers I only put some kind of Ham on the bread, easy and fast.
the first, however, is still a very easy recipe, wholemeal spaghetti with mussels and prawns, it will take you about half an hour.
You need :
140 g wholemeal spaghetti
8 big prawns
500 g mussels
10 cherry tomatoes
Half a clove of garlic
minced parsley to taste
1 pinch of salt
1 pinch pepper
5 tablespoons extra virgin olive oil
First clean the mussels: control them and select the intact ones and eliminate the broken ones, are dangerous for the stomach..
From each, remove the filament and clean them well, scrape their shell well in order to eliminate the various filaments.
At this point put them in a large bowl and rinse them under fresh and cold water almost 10 times in order to eliminate any impurities or dirt.
Take a big saucepan and put the mussels in it; add two parsley leaves and add two extra virgin olive oil spoon .
Let them stay in the pan for almost 20 minutes then remove the shells or if you like you can put them in the pasta, I only put some shells in the pasta.
Move on to the prawns: let's clean well too, remove the heads, the shell if you like you can use tails or legs, some people like it.
Rinse everything under running water for some minutes, and dab with a paper towel.
Than, tomatoes, Rinse under the water the cherry tomatoes than cut them into cubes. Chop the parsley.
Than take a large saucepan and heat the extra virgin olive oil with half a clove of garlic. It's useful for make the pasta sauce flavoured.
Add the prawns and cook for some minutes on the side by side. Temporarily remove them from the pan and add the tomatoes cubes .
Cook the tomato sauce by adding the filtered liquid from the mussels. Add some spoon of pepper.
Than boil the spaghetti ,in the same time put the tomatoes, mussels and prawns all together in the pan mix everything and add some parsley. Drain the spaghetti and put them in the saucepan with the sauce.
Mix them well and add another spoon of pepper and parsley.
Spaghetti are ready!
In the end we have the shrimps cocktail it's easy I just brought 2 kilos of shrimps, boil them for almost 20 minutes and when they are ready I mix them with mayo and add two iceberg salad leaves.
