This was so delicious!
Yesterday we feasted. Along with some other amazing meals, I decided to marinate some venison backstrap and then hickory hot-smoke it. I am blown away at how delicious such a simple thing can be when it's basically just meat and smoke. Ideally it would have been nice to let it go for longer, but even after about three hours the meat was sufficiently smoked and still juicy!
We enjoyed some nice portions last night for dinner along with some homemade bread, corn on the cob and mashed potatoes. Today, we finished what was left with some sharp cheddar cheese. It was amazing. If you've never tried hot-smoking meat over an actual fire, I'd highly recommend it. Here are a few photos of the result. Enjoy!
