Intro
One of my mottos with food, and life in general, is "Feta is Betta!" lolol There are very, very few things that do not pair extremely well with feta cheese and I have long emphasized the flavor profile of grilled burgers with feta and other Mediterranean accents. I've never taken the time to write down this process as I mainly cook by "feel" but wanted to give it a try because this burger is just to flipping good not to share with the world!!!!
Ingredients
2lbs Ground Beef
1 Sweet Onion
2 Cans Baby Bella Style Mushrooms
2 Tablespoons Kerrygold Grass-Fed Butter
2 Tablespoons Minced Garlic
1/2 Cup Feta Cheese
1 Tablespoon Your Favorite All-in-one Mediterranean Seasoning
1 Cup Tzatziki Sauce (Chilled)
Preparation
In a large mixing bowl, combine the ground beef, feta, 1/2 of the sweet onion (diced), Mediterranean seasoning, 1 can mushrooms (diced) and 1 tablespoon of minced garlic.
Once combined, pat out into large 3/4 lb burgers, now this may seem too big, but they will shrink some on the grill and since I don't use buns the burger patty acts as a vehicle for the other ingredients and needs to be a bit larger than traditional burgers.
Grill the burgers to the desired internal temp., trust me mine is much, much lower than most people's lolol, and set aside for them to rest. Just a little tip when grilling ANY type of meat it is extremely important to let them rest for 10-15 minutes before cutting or eating.
As the burgers are resting, melt the butter in a sauce pan and once hot pan fry the remaining garlic and then add the remaining 1/2 of sweet onion (diced with a little of the greek seasoining added) and cook until the onion is slightly translucent. Once the onions are slightly clear, add the remaining can of mushrooms and cook until mushrooms are hot. Once done, remove from heat and begin plating.
You plate this by taking one of the patties and placing it slightly off-center on a large plate and then add heaping spoons of the butter/garlic/onion mixture. And then you top this with a HUGE dollop (nope...not big enough...add more......still not enough...a. little more....THERE!) of the Tzatziki Sauce. Now let me add that I have tried many, many times to make this sauce from scratch and have failed miserably every...single...time! lololol So I just buy it from the refrigerated section at most grocery stores. It is imperative that the Tzatziki sauce is very chilled as it will add an additional texture and sensation to the warm burger and other toppings. The final touch to this masterpiece is a handful of feta sprinkled across the top of the burger.

I usually make these burgers several times a year and I thoroughly enjoy them every single time. They are perfect for grilling in the summer or in the winter and they are a perfect twist to a normal, boring bbq party!
