Today I made Dalma. Most of the people don't know what it is. Even I also had it first time when I went to Puri at Jagganath Temple. I hardly knew anything about odia cuisine. But after my trip to odisha, made me to know about the odia cuisine.
It is a part of Chappan (56)bhog (prasad) ,offered in the Puri Jagganath Temple. Dalma is a traditional dish from Indian state Odisha. It is a very healthy preparation made by cooking mixed vegetables with lentils. It is cooked with toovar dal (split pigeon pea) and has flovours coming from the ghee and the spicy seasoning of roasted cumin and red chilli powder. This is onion garlic free recipe which is very simple to cook. It is served with steamed rice topped with dollop of ghee in every odisha household.
Let's have a look how to cook Dalma*-:
1.Rinse dal (split pigeon pea) and soak in water for 30 min.
2.peel and chop the veggies like pumpkin, drumstick, potato, beans, carrot.
3.transfer the choped veggies and soaked dal into pressure cooker.
4.add 1 bay leaf, grated ginger, turmeric powder, water and salt. Cover it and cook it for 2 whistle on meduim heat.
5.Now will prepare the spice mix.
For that in a pan or kadhai dry roast the cumin seeds and red chili and cool down it. After that grind them.in a jar to a coarse powder.
6.Open the pressure cooker, dal.must be cooked but veggies should not be mushy.
7.Add 1 cup water if dal is dry. Then in a pan heat Ghee add asofeodita to it. Then add panch phoran (5 types of mix spices like cumin seeds, mustard seeds, fennel seeds, fenugreek seeds, and Nigella or kalonji seeds) . Allow the spices to be sizzle in ghee for few seconds.
8.Add chopped tomatoes and let it sizzle for 5 min till tomatoes are mushy.
9.Then add red Chilli powder and roasted cumin powder .
10.Give a good stir and add half cup water. Let it simmer for 5 minutes.
11.Pour this seasoning or tadka to the dalma as shown in the pic below.
12.Stir well and add 1 spoon of ghe/butter. Garnish it with coriander leaves.
Serve this delicious dalma with steamed rice topped with dollop.of ghee/butter.
Note-: don't skip the roasted cumin and red chilli powder seasoning as it adds the to the characteristics flavour of dalma*.
