Greetings!
A quick south Indian breakfast dish Vermicelli Upma Semiya Upma is quick, light and healthy snack that you can cook easily in just 20 mins with simple ingredients. This is a type of pasta similar to Italian spaghetti.
It is a common South indian cuisine dish which can be extended to other variation like pulav, khichdi recipes.
Semiya is south Indian word meaning vermicelli and Upma is a south Indian breakfast made with Semolina (rava) and tempering ingredients. So it is a variation of Rava Upma.
So let's see how to make this recipe- :
●In a kadai or pan heat oil, add mustard seeds, few curry leaves, 1 spoon Chana dal and handful of peanuts. Roast till it become crunchy on low flame. Then add green chilie and choped onions. Saute slightly.
●Now add choped veggies like bell peppers,carrots, beans, cauliflower, peas etc. Saute them.
●Add turmeric powder, red chili powder and salt.
●Cook the veggies for 2 min and add roasted vermicelli.
●add 1 cup of water. Turn the heat to meduim and cover the pan and simmer it for 10 min till the water is absorbed.
●After few min open and stir the vermicelli mixture. You will notice the vermicelli getting steamed and cooked.
●Once cooked turn off the heat and keep pan covered with the vermicelli for about 5 min. This will bring out the delicious flavors and texture.
●Finally stir in the lemon juice, chopped coriander leaves for added flovour.
●Serve vegetable vermicelli with tomato chutney or as it is.
