Well...maybe if I didn't marry a Moroccan, I would have never known the real TAJINE taste!
Ok let's start by making this clear...
A TAJINE is a dish that gets it's name after being cooked in an earthenware pot in the Maghrebian countries...called TAJINE!!!
So basically...it is the cooking recipient which is called 'Tajine!'
Now, for example if you are cooking beef in that earthenware pot...with the Moroccan spices and 'savoir-faire'...then you get a Beef Tajine!

Nearly one a week, I get to enjoy a nice homemade tajine cooked by my wife at home!
I'm not sharing any recipe today...only showing some different tajine photos that I had the chance to taste the past weeks!

Chicken Tajine loaded with Vegetables!
Another important point to be noted is that traditionally tajines cooked on charcoal give much better taste.
But at home we don't have a choice, we cook on the gas stove only.

You can make any type of tajines...beef, lamb, fish, seafood, prawns, vegetables...

It is in the 9th century that cooking in tajine started thanks to earliest writings about this particular cooking concept.
Same can be found in the famous '1001 Nights' an Arabic collection from the 9th century.
Beef with plums and almond!
Traditionally, tajines consist of 2 parts;
The BASE unit which is circular and flat with low sides and the DOME shaped cover.
This special cover is made such a way that all condensation during cooking return back to the bottom in the base unit!
