3.5 pounds French Roast
2 large onions, sliced
1 whole head of garlic
Spread the onion and the garlic cloves at the bottom of a large baking dish.
Place the meat on top.
Add 1 cup of red cooking wine (or any dry red wine)
Mix 3 tbs maple syrup with 3 tbs ketchup and 3 tbs olive oil and spread it on top of the meat.
Add 1 tbs cumin, 1 tbs salt, 1 teaspoon pepper, 1 teaspoon paprika.
Add 4 large carrots around the roast and sprinkle some olive oil on top.
Cover the pan with foil and bake at 400F for 2 hours. Then uncover, baste it with the juices and roast for 40 more minutes.
Remove from the oven, let the roast rest for 10 minutes, then slice it against the grain.
