Who doesn't love mixed vegetables? I guess we all do. And when it comes to nutrition then adding multiple colors is a good decision. Fortunately, this is one of our traditional recipes and we eat this rainbow curry very often.
Let me share the cooking process!
What we need?
- Multicolor/rainbow color vegetables
- Onion & garlic slices, ginger paste, green chili slices
- Turmeric powder, salt
- Cumin
- Vegetable oil
How we can make this?
This recipe is super easy. Takes only a few minutes. Let's see...
Add any kind of vegetable you want, cut in cubes, wash them properly.
Heat the pan, add vegetable oil, fry the garlic and onion slices, add cumin and ginger paste and cook them for a minute.
Add the veggies. Put turmeric powder and salt. Add green chili slices. Combine them well. Put a lid on and cook in medium-low flame for 10-15 minutes.
Add water if needed. If you want let it half boil. But as my son doesn't like that so I properly cook them. But for best taste half-boil is preferable.
Serve it with rice/roti or you can eat it solo.
I added a piece of fish and some lentils with this rice. It was my son's lunch.
The color of this curry is amazing, it tastes great, and no need to say that it's full of nutrition. You can cook it in a different way too.
