Hi food buddies here in hive!
I would like to share a recipe that even the picky eater will like, I know some kids are difficult to feed with vegetables. You're really a blessed mom if you're kids ate almost every food in your table. We can also make some tricks in making them eat vegetables without them knowing.
Here's what we need:
•1 1/2 Cup Mashed Squash, boiled and drained ahead of time
•3/4 Cup or 150g Corned Beef
•1 Egg
•1 teaspoon Garlic Powder
•1/2 teaspoon GroundPepper
•1 1/2 teaspoon Iodized Salt
•1 Cup Breadcrumbs
•1 Cup Breadcrumbs, for coating
•1/2-1 Cup Oil for frying
Let's start cooking.
Put mashed squash in a large bowl.
Add egg and corned beef, mix well.
Pour 1 Cup breadcrumbs, season with salt, pepper and garlic powder. Mix until everything is well incorporated.
I used 1/8 measuring cup to scoop squash-corned beef mixture then form it into a square.
Coat it with breadcrumbs and set aside until you finish all the mixture.
Fry it until both sides are golden brown and drain excess oil.
Transfer it in a serving plate, you can dip it in a tomato or banana ketchup. This is ideal for snacks or you can even eat it with steam/fried rice.
We love this squash and corned beef nuggets because it is crunchy outside and soft inside. It doesn't even taste like squash according to one of our housemates and they love it.
