Hello foodie lovers! How was your day today? I had been busy outside the house to clear the extracted trees caused by the past typhoon. Yes, as if it was really pulled out from its roots. There were two huge trees and I only hh
smaller one cleared including the ground and mounts of fallen leaves! Together with the 2 kids of my helper, we cleared the ground then they said that my cassava plants had bloated roots already. I got excited upon hearing this, and told them to pull them all and replant the stems.
We've harvested more than enough for our afternoon snacks. Cassava is usually cooked by boiling it with some amount of water. I asked the kids to bring grated coconut the following day because I like some sweets in it.
Boiled Cassava with coconut milk
Ingredients:
10 cassava roots, peeled
4 cups coconut milk, 2nd part
1 cup pure coco milk
1 cup brown sugar
Instructions:
Peel off the sap then wash thoroughly.
Pour 1 cup of water into the grated coconut, squeeze out the milk then set aside. Next pour another 4 cups of water again, squeeze out the milk. Use this in cooking the cassava.
For this kind of cooking, I like to cook it the traditional way in which I cook it using firewoods in our dirty kitchen. Well, we have enough dried branches at the back in case we run out of gas.
See to it that the cassava is well done not half cooked because it's not advisable.
When it's done, pour 1 cup of sugar along with 'kaka' (first squeeze) over medium heat to prevent it from getting burnt.
It's best served either hot or cold over a cup of brewed coffee.
Cassava Cake with young coconut filling
My young helper had peeled more than what I needed so I opted to make a cassava cake.
4 cups grated cassava (squeezed)
1 cup young coconut, sliced
4 eggs
4 cups Tru Orange as flavor enhancer
1 can condensed milk
1 Nestle Cream (optional)
2 tbsp butter/margarine
1 tsp vanilla extract
Instructions

*Beat the eggs, condensed milk along with nestle cream.
Add the grated cassava and TruOrange while gradually mixing the melted butter and vanilla.
Place the mixed ingredients into the baking pan then add the young coconut for filling. I am supposed to add cheese and raisins to add more flavor but Antonia didn't liked it :)
I also preferred to cook it via steaming for at least 30 minutes before putting it in the oven to make sure that it inside stuffs are well cooked.
Preheat the oven to 250° and set it for at least 30-45 minutes. When done, add the toppings (young coconut and condensed milk)for 10-15 minutes over low heat. See to it that the toppings are only in golden brown color to preserve the yema flavor. It is best to caramelize the condensed milk first before topping for a more delicious effect! Serve hot or cold.
