My version of Taco fillings consist of basic ingredients in my fridge, except the mango which is seasonal. Taco fillings have many variations, you can put anything you like, no rules. I added mango for sweetness and to balance the flavor.
Ingredients:
Mushrooms, sliced
Onion
Frozen peas
Corn kernels
Mango
Preparations
Sliced fresh ripe mango and set aside.
In a preheated pan, Add olive oil, Saute onion and mushrooms until wilted.
Add the frozen peas and corn kernels. Cook for a few minutes.
Season with salt and pepper and turn off the heat.
Preheat the pan and heat the tacos on each side for a minute.
Put in the fillings and topped with fresh mango.
A delicious and healthy snack you can prepare in less time. It's also ideal for parties or main meals.
