When I lived in Austin, I used to go see movies at the world’s most amazing movie theater – The Alamo Drafthouse. It was a magical place, you see. They served great food, beer, and cocktails DURING movies! They also had hysterical special comedy shows and movie quote-alongs (among many other interesting movie related activities). One thing I always had when I went to see movies there was a great salad with fried goat cheese rounds on top. I also had fried pickles, which I will post in the near future. But I digress…This salad was amazing and it was so simple. So, when I moved, I dedicated a few years off and on to recreating it. Let me just say that the first few tries were messy because the cheese would melt right into the oil and I would almost burn my kitchen down. Not really, but you get the point. The trick is actually very simple – FREEZE the rounds for a couple hours before you want to eat them.
Here is what you need: A salad mix of your choice, balsamic vinaigrette (these 2 things aren’t pictured because people have a lot of different dressing and salad preferences – I used arugula and a homemade balsamic dressing), goat cheese, all-purpose flour, egg, water, Italian-style breadcrumbs, and salt & pepper.
Salad with Fried Goat Cheese Recipe
1 egg
6 oz. goat cheese
1/4 cup flour
1/4 cup Italian-style breadcrumbs
1 tbsp water
Salad mix
Balsamic Vinaigrette
Salt & pepper
4 tbsp olive oil
Take about 6 oz of goat cheese and divide it into 3 small patties. Your hands will get dirty, but it’s worth it. Compress the goat cheese with your hands so it forms a nice thin patty. Place it on a parchment lined plate and form the other patties. Transfer to the freezer for at least two hours.
After the goat cheese rounds are frozen and you’re almost ready to eat, set up your breading station. Stir together flour with a pinch of pepper and salt. Whisk together 1 egg with a tbsp of water in a small separate bowl. Pour in breadcrumbs in the another bowl.
Right before you bread your goat cheese rounds, heat 4 tbsp of oil in a small skillet.
Coat each goat cheese round with the prepared flour mixture and the egg mixture. Then coat with the breadcrumbs. Transfer them over to your heated olive oil for 2 minutes.
Remove from the pan and lay on top of salad mix and top with a bit of dressing and enjoy!
