I had some guests at my place last night. I made Rajma rice (Red beans with gravy and rice) and they all loved it. The rajma were completely consumed but a lot of rice were left. I don’t like to waste food at all so I decided to use them for lunch today. Guess what I made? Lemon Rice!
Lemon rice is a South Indian delicacy that can be prepared very easily. It requires some basic ingredients and can be prepared quickly without too much efforts. I made them using left over rice this time but I prepare this dish frequently with fresh rice as well.

| 6. | Dried Red Chilli | 1 Unit |
| 7. | Chopped Ginger | 1 Inch |
| 8. | Chopped Green Chilli | 2 Units |
| 9. | Turmeric powder | 1/2 TBSP |
| 10. | Boiled Rice | 1 TBSP |
| 11. | Salt | To taste |
| 12. | Oil | 2 TBSP |
Method
Step 1: Take a pan, heat oil in it. Now add mustard seeds, curry leaves and peanuts. Saute for 1 minute.
Step 2: Now add the urad lentils, chana lentils and red chilli.
Step 3: Add chopped ginger, green chillis and turmeric powder and give it a good mix.
Step 4: Finally add the rice and salt and mix well.
Step 5: Turn off the flame. Add 4 TBSP of lemon juice and mix well.
Step 6: Serve the lemon rice hot with garlic papad and mint chutney.
