Chinese Cuisine is one of the best cuisines for me. Chilli garlic noodles are full of flavour and the spice is something to relish.
I once went to Thailand and had authentic chilli garlic noodles. Somehow it didn’t suit my taste buds a lot. In India, we make Chinese dishes like Noodles, Fried Rice, Manchurian very differently using a lot of spices. That’s what defines Chinese food for me. It has a lot of vegetables making it a delicious and healthy recipe.
Also, you don’t need any separate gravy with these noodles because of the flavour they carry. They are best eaten alone.
A suggestion here is to prepare these in a large iron kadhai (pan) and not in any aluminium vessel. A proper iron pan gives its distributed heat and cooks them really well.

Ingredients

| 6. | Garlic cloves | 6-7 Units |
| 7. | Cabbage | 1/2 Unit |
| 8. | Green Beans | 10 Units |
| 9. | Black pepper powder | 1/2 TBSP |
| 10. | Soya Sauce | 2 TBSP |
| 11. | Vinegar | 2 TBSP |
| 12. | Green Chilli Sauce | 2 TBSP |
| 13. | Salt | To taste |
| 14. | Oil | 2 TBSP |
Method
Step 1: Boil the noodles in hot water. Once boiled, strain them in a strainer and pour cold water from top. Rinse well with cold water. Now add 1 TBSP Oil in the noodles and mix well. Keep aside.
Step 2: In a pan, add the sliced onions. Saute until they turn brown. Add green chilli slits and chopped garlic cloves and let them turn a little brown in color.
Step 3: Now add the sliced carrot, sliced capsicum, chopped beans and chopped cabbage. Saute on high flame for about 2 minutes. Cover the pan and allow the vegetables to cook for about 7-8 minutes.
Step 4: Add soya sauce, vinegar, green chilli sauce, salt and black pepper. Mix well.
Step 5: Now mix the noodles with the vegetables and cook for another 5 minutes on high flame till the noodles are properly mixed with the vegetables.
Your Noodles are ready now to eat. Serve hot with any Chinese gravy or you can eat them like that only, they are super tasty.
