Scrambled Egg, Ham, and Tomato Cheese Wrap with Fresh Peaches and Blackberries
This recipe is so simple, quick, and great for keto (even the fruit is great in moderate portions for Keto eaters.)
Ingredients:
1/4 cup Parmesan cheese (shreds not grated)
1/2 cup of Fiesta Blend (or any yellow and white cheese bag blend will work)
2 Eggs (scrambled - you can use egg replacement, as well)
1/4 -1/2 cup Julienned Ham
1 Medium Fresh Tomato (rough cut chunks)
1 Small to Medium Fresh Peach Sliced - Keto users (make sure the peach is on the solid side, this helps keep the carbs lower due to less naturally occurring sugars present)
7 Blackberries
(Optional Ingredients- Red pepper flakes or pepper - salt is great but the cheese is salty so I would wait to add it until after you taste the finished wrap.)
PREPARE
Make sure you have scrambled your eggs before starting the wrap.
One important aspect of making a cheese wrap is using the right pan. Your pan should be of the ceramic non-stick variety.
Begin heating your pan on medium, sprinkle the parmesan into the pan by itself and let it melt.
Then add the fiesta blend cheese over the top of the parmesan.
Cook on Medium high until the cheese crisps up on the bottom. Then add your ham and eggs on one half of the crisped cheese (shut off the burner).
Add some of your fresh tomato on top of the ham and eggs.
Carefully fold the crisp cheese over the ham,eggs and tomato, and slide onto your plate. Add some more tomato to the top and sprinkle with a pinch or so of the shredded cheese (just to make it look pretty).
Then garnish the plate with you sliced peaches and blackberries.
